Ingredients:
4-5 boneless skinless chicken breasts, halved lengthwise
1 tablespoon paprika
1 teaspoon ground cumin
1/2 teaspoon cayenne pepper
1/2 teaspoon coriander
1/2 teaspoon oregano
salt /pepper
extra-virgin olive oil
Method:
1. In a small mixing bowl combine, paprika, cumin, cayenne pepper, coriander, oregano and 1 teaspoon salt.
2. In a large shallow baking dish, place chicken pieces and drizzle with olive oil to coat. Rub each piece with the spice mix and let them stand for about 10 minutes.
3. Heat a large skillet over medium high heat and brown the chicken pieces. Reduce heat, cover and cook for around 10 minutes each side.
4. Transfer to serving platter and enjoy.
