Mozzarella and Tomato

Ingredients:
  • 8oz fresh buffalo mozzarella (cut into small pieces)
  • 12 oz small fresh cherry tomatoes
  • 2 garlic cloves (finely chopped)
  • 1 handful fresh basil leaves
  • 2 tbsp olive oil
  • salt & pepper
  • 5 tsp Dijon mustard
Method:

1. To make the dressing first blend mustard, oil, vinegar and torn up basil together in a large bowl.

2. Add mozzarella and tomatoes, mix very well until cheese and tomatoes coated with dressing. Serve as a starter or with crusty bread.
